Today I went to my favourite cheese shop in victoria, Choux Choux Charcuterie. I choose two blue viened cheeses, a gorgonzola, a soft blue veined brie and a blue cheese. And nothing goes better than a good, salty cracker!
3/4 c flour
1 tsp freshly groud black pepper
1/4 c water
1 tbs butter
3 tbs flax seed
Olive oil and salt to finish (I used a local vancouver island mushroom salt)
Mix flour, flax and butter and pepper. Slowly add water until a dough forms. Refridgerate dough 20 mins before working with it. Roll it out into sheets with a pasta roller, or use a rolling pin until it is a few mm thick. Brush with olive oil and dust with salt. Bake at 350 celcius until golden brown. About 8-10 mins. Grab your favourite cheese and a glass of wine and enjoy your homemade crackers!
